Weeknight dinner can be challenging – many of us are short on time & looking for inspiration. This time I chose France. There are so many French dishes that are easy to prepare and absolutely delectable.  Some of the recipes we will make together in class include: Cheese Soufflé with Mixed Herbs; Mussels in White Wine; Tomato, Eggplant and Zucchini Gratin; Chicken with Mushrooms and Vinegar and Warm Goat Cheese Salad.  To name only a few.  Walk out of this class with a new repertoire of  French recipes making your weeknights just a little easier and definitely more delicious!

Argentine Empanda Party

It’s Friday and that means empanada party! In this class we will learn to prepare empanadas from start to finish: dough, fillings and assembly. The menu will include beef, chicken, ham and cheese and spinach empandas as well as fresh and original salads. You will also enjoy a glass or two of Malbec and Torrentes wine from Argentina’s northern province of Salta. And, of course no Argentine meal is complete without a delicious alfajor de maicena for dessert.

College Bound Cooking

You are on your way to college, but have rarely cooked a meal for yourself. This class will give you some key cooking techniques that are ideal for college living, but will last you a lifetime.

This is a hands-on cooking class ideal for 4-6 college bound high school juniors or seniors and current college students. How do you hard boil an egg, make a vinaigrette or chop an onion? You will learn the answers to these cooking questions and many more. You also will learn to properly handle a chef’s knife by slicing and dicing your way through these recipes: Red Lentil Soup; Chicken Caesar Salad; Pasta alla Amatriciana (spicy tomato sauce with pancetta); Roasted Citrus Salmon and Roasted Brussels Sprouts with Pancetta. You will also receive 10 additional recipes which will be easy to prepare using the skills you learned in class. Let’s face it — it’s better to know something about cooking than nothing before you head off to college.

Everyday Global Cuisine: Recipes Inspired by Yotam Ottolenghi

I have become completely fascinated with chef and cookbook author Yotam Ottolenghi. His recipes are global because they bring together a variety of ingredients and techniques from all over. Most importantly, all his recipes incorporate an array of vegetables, herbs and spices making these dishes incredibly flavorful with very little effort on your part. In this class we will focus on making dishes that are easy to prepare for weeknights, but impressive enough to serve at a dinner party. Some of the dishes may include: Spicy Chickpea and Bulgur Soup; Puy Lentils with Sour Cherries and Gorgonzola; Halibut with Red Pepper and Hazelnut Salsa; Roasted Chicken with Sumac, Za’atar and Lemon; Marinated Eggplant with Green Tahini Sauce; Poached Cardamom Pears and Spice Cookies. You will receive additional recipes to try at home using the techniques demonstrated in class.

It can be either a demonstration class or an hands-on cooking class. These classes can be done in my kitchen, your kitchen or at a select San Francisco venue.  Get a group of friends together and learn some new cooking techniques and recipes that you can use everyday!
